This is the secret of the numbers on your egg carton:

(1) How to decode your egg carton:

(a)The three code on the side of your egg carton is the Julian date which the sell by date.

(b) The Julian date is the day your egg carton is packaged. the numbers are 001-365.

(c).Each code represents a day in the year. 001 is January 1 and 365 is December, 31.

(d) Once eggs are packaged they will be safe for five weeks.

(e)This is a warning from the U.S. department of agriculture. Eggs can be sold up to 30 days after they are packaged. So make sure you look at the expiration date on the egg carton before purchasing eggs.

The reason that package dates are important

As an egg ages it loses moisture and carbon dioxide. Which could lead to a food born illness.

Now it is very important to know the plant code which is where the eggs are packaged. By knowing the plant code you will know if the eggs are recalled and the plant where they are packaged.

If you do not want to calculate the Julian date here is a rule of thumb to follow. If you are buying eggs in January look for lower codes such as 015 and if you are buying later in the year look for the highest code number.
