Prepare Potato Salad in Your Skillet

Here are the directions in preparing potatoes in your cast iron skillet. Heat oil over medium heat. Then add potatoes to your skillet. Now fry them for about ten minutes while stirring it occasionally.
Now my relatives who are awesome hillbilly cooks prefer to fry their potatoes in bacon grease which is ok if you are cooking for a bunch of hillbilly’s like me. However, If  you preparing potato salad  for a diverse group they might not like the unique taste of bacon grease. So it probably best to use vegetable oil.

Now when preparing potato salad it is very important to choose the correct potato.  Do not use a starchy potato like a Russet, while they are excellent for mashed potatoes due to their ability to absorb butter and cream while remaining light and fluffy. However, do to that fact that they break down while cooking them the results when using russets in your potato salad is that they will crumble into a gluey, and sticky mess.

Since they retain their shape while cooking the best potato to use a thin skinned  waxed potato like red, or new potato.

Now if you like your red potatoes fried in bacon grease like most hillbilly cooks do and you are cooking for a diverse group of people it is best that you make two batches of potato salad.
