Have Mesquite Chips with one other chip.

  • Hickory has a sweet to strong taste which gives it a bacon taste..
  • Mesquite is a strong flavored wood, but it can create a bitter taste if used on its own.So it best to combine it with a fruit wood which will reduce the bitter taste.
  • Cherry, apple, maple and pecan woods are all lighter woods that have a mild sweet flavor.

Most Hillbilly Cooks that I know use hickory wood chips to smoke beef ribs.
