Now use the Pork shoulder to prepare both the Butt and Shank.

The  two parts of the shoulder that hillbilly’s cook with are the butt end which is the end of the shoulder and not the actual butt and then there is the shank end it is called that because it has a bone in it.

Both parts of the have their own unique preparation.

Now pulled pork can be made either the butt or shank end. The butt end what most of  my Hillbilly relatives preferred to the  shank because of less bone and connective tissue.

Now my Grandma used the shank end for soup stock which made for great bean soup and corn bread
